I love the danish!

Happy Sunday,

 I hope you are all catching up on sleep. I did. Now I'm bogged down with practicing for my excel test tomorrow, my theory test tomorrow and working on my skills stuff. Sunday is my catch up day. 

 This week we are in V and I'm loving it. I'm FINALLY figuring out what I love to do in Pastry. It's not bread, but If I had a job where I had to make it I totally could. I'm LOVING danishes, and cookies and cakes. Anything with pastry and doughs and fillings. 

 In the last few days we made danishes. First time I have ever made them and I loved it. They were so beautiful and so so soooooo yummy! There is a TON of butter that we have to fold in to the dough. Then we roll it out and do our first fold, let it relax. Then we do it all over again. We kind of rushed the process and didn't let it relax for as long as it should of - time crunch, but they still turned out lovely. Chef was impressed. He said we did a really great job and that they looked great! yay! 

 We made a cream cheese filling and put raspberries on one. We put almonds on the other and drizzled both with a flat icing when they came out of the oven. 







 EEEEEE!!! Aren't they so pretty!? Look at that layered goodness. I'm excited to start making croissants! (thats in the next rotation) 

 We also made peanut butter cookies. Not a fan. I think I'm pretty well the only person on the planet that isn't all gaga over peanut butter. The only way I eat it is when I spread it on a banana for a power snack. I don't get the love affaire with peanut butter. 



We made coconut macaroons! These things are heaven. I am  HUGE lover of coconut anything. These were so gooey and yummy. mmmm super easy to make too. I would love to make these at home at some point but with my top element in my oven not working I'm not sure they would cook and brown all the way. Being in pastry school and having a broken oven at home kills me. It's very unfair. So much baking could be done *sigh* - The joys of apartment living. Oh well! What can ya do!? Deal with it and move on I guess. 






 We also made zucchini muffins. I absolutely hate this vegetable. People say it tastes exactly like a cucumber - IT DOES NOT! I love cucumber, eat it almost every day. After the muffins were made I got handed a piece to try. A few bites in and I spit it out in to my hand. Chef was standing right there and he looked at me and laughed "You know if you don't like it you can throw it out, you don't have to hide it." haha. I don't think I will ever come around on this veggie, even if its in something as yummy as a muffin. 

 Then we made a something chocolate something cake. It's been a long week. We made a meringue and piped that in a mould then piped in some yummy chocolate creation (that we will use next week for bear claws!) then more meringue over it. I think it will be a very light and yummy cake. 




We wrapped those up and put them in the fridge and will serve those next week. I'm looking forward to seeing how this tastes. 

 Then we made almond tuilles. I made mine to thick. Oh well, live and learn. These were easy to make and a great vessel for serving food in. Gotta keep that in mind. 


It's been a very fun week so far. Next we are starting to prepare for the Decadence event! So exciting! I'm very excited to show you our dessert that we will be presenting. Stay tuned!
